Gluten-Free, Sugar-Free Banana Bread

A delicious gluten-free, banana bread recipe (dense, moist & fragrant) that the whole family will love. Made with almond flour, butter, and monk fruit sweetener, this recipe is full of healthy protein, fiber & good fats to keep you feeling satisfied & energized-  perfect for breakfast or as a comfort treat you can indulge in without feeling guilty.

Ingredients:

  • 1 ½ cup almond flour
  • 2 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1/2 tsp cinnamon powder
  • ½ cup butter
  • ½ cup monkfruit sweetener
  • 3 eggs
  • 3 medium-size bananas
  • ¼ cup chopped walnuts

Preparation:

Preheat the oven to 180 deg celsius.

Whisk butter with monkfruit sweetener until pale and fluffy, then whisk in eggs. Add the bananas and mash them up with a fork, texture is desirable here.

Sift the baking powder, baking soda, sea salt, cinnamon and almond flour together.

Combine the 2 with scrape/fold movements of a spatula. Do not over mix, just scrape and fold until you no longer see dry powder anymore. Stir in the walnuts and mix slightly.

Prepare a baking tin by lining it with baking paper, pour the batter in and bake for 1 hour. Bake until a tooth pick comes out quite clean.
